Valentine’s Chocolate Mousse Recipe

Valentine’s Day is fast approaching and we’ve got the perfect treat to help you celebrate.

Nothing says “I love you” better than chocolate, and this home-made chocolate mousse, courtesy of our clever chefs, won’t disappoint.

Ingredients:

  • 300g 70% Dark Chocolate
  • 2 Whole Eggs
  • 5 Egg Yolks
  • 250g Sugar
  • 80ml Water
  • 500ml Cream


Method:

Put chocolate in a metal bowl and place over a pot of simmering water to melt.

Add sugar and water into pot and bring to boil.

Add eggs to a mixing bowl and use a mixer, mixing on a medium speed.

When the sugar reaches boiling point, take it off and carefully but slowly pour it onto the egg mixture.

Continue to whisk the egg and sugar on a high speed until it cools down to room temperature.

Whisk the cream in a separate bowl to a very soft peak, set aside.

Mix a small amount of egg mix in with the chocolate until thoroughly mixed.

Add the rest of the egg mix into the chocolate in two batches and fold in gently.

When mixed, add the cream in 3 batches folding gently until all mixed in.

Fold into chosen serving dish.

Leave in fridge to set for two hours.

Garnish with raspberries as desired.
